Jess’ romance with singer John Mayer, 29, is so hot that the couple was reportedly seen checking out diamond rings at Cartier on March 8 during their six day trip to Rome!

And John has been telling friends “she’s the one he wants to settle down with,” says a source. “He says, ‘she has all the right ingredients, and she makes me laugh.’”

John Mayer is shopping for his and hers accessories for himself and girlfriend Jessica Simpson! The rocker was spotted at the Wanna Buy a Watch store in West Hollywood on Mar. 16, where he reportedly bought his and hers vintage Rolex watches. And he clearly had Jessica on his mind during his shopping spree. “He talked about Jessica the whole time he was here,” a store staffer tells Star. The next day, John was spotted at a Gelson’s supermarket in L.A., buying blue wrapping paper, no doubt to wrap his gift for Jessica. What’s next, matching jump suits?

Jessica and John have returned from their Roman holiday, and are back in Hollywood.

(Aside: Jess looks really thin - do you think she’s losing more weight?)

This weekend they were on a date at the Ivy, one of THE Hollywood see-and-be-seen hotspots. If you ask me, that’s the perfect place to hang out if you want to announce your return to the United States. Paparazzi are nearly ALWAYS hanging out there, waiting for their next big paycheck (in the form of a photograph, of course).

Jessica Simpson and John Mayer spotted walking hand in hand in Rome, Italy this afternoon where they are on currently vacationing together.

The couple arrived at the Leonardo da Vinci Airport this morning and were then driven by van to their hotel, which is in the center of town.

Later on, Mayer and Simpson lingered over a romantic lunch at famed restaurant “Dal Bolognese,” for more than two hours, before doing some sightseeing on foot.

Last Wednesday, February 28, 2007, John Mayer held a concert at Madison Square Garden in New York City - and guess who came along to keep him company? Jessica Simpson (and her micro-managing father, Joe).

After the concert Jess & John headed to an after party at NYC hotspot Stereo, where it looks like rounds and rounds of drinks were collecting on their table! (See pics after the jump!)

John Mayer is no longer talking in code - or Japanese - when he is asked about Jessica Simpson. The couple, who have been traveling together on Mayer’s national tour, are officially an item after months of speculation - and the singer/songwriter is happy about it.

The “Your Body Is A Wonderland” singer told Time Out New York magazine, “I’m having the best time of my life, so if the names don’t make sense to people, that’s so small to me.” The shaggy haired singer, who has managed to capture the heart of one of Hollywood’s most eligible bachelorettes, denies that he denied he is dating the pop star. He said, “I don’t think I’ve ever denied it. When did I deny it?”

On Tuesday night (Feb 20), John Mayer played a concert in Chicago. His lovely lady, Jessica Simpson, was there grooving to his music!

They stopped for a photo op, and I absolutely adore this pic of them. While I’m not a huge fan of John (in comparison to NICK! and, yes, I will continue beat this dead horse), I think they look great here.

If you’ve been wondering what prompted blonde bombshell Jessica Simpson to go dark, you’re not alone.

Jessica’s hair stylist and close friend, Ken Paves, gave PEOPLE the scoop behind her bold new look. After a day spent lounging by the pool together, the two came inside and started playing with extensions from their HairDo line.

Jessica asked Ken, “‘What do you have in there that’s red?” Ken clipped a piece into her hair and Jessica said, “I want to leave this on! I want to wear it out.” She did just that, to great effect (the front part of her hair was sprayed with temporary color to match the extensions).

Jessica loved the change so much that the next morning, she asked Ken to make it permanent, saying she “felt more like herself.”

As for the rumors that Jessica went dark for new boyfriend John Mayer’s benefit, Ken scoffs at the idea. “It just happened. She had no intention of coloring her hair. This was done on a whim — two friends horsing around and playing dress up. A woman doesn’t have to be doing it for somebody. Sometimes it just happens.”

Double Grammy winner John Mayer was in a gregarious mood on Sunday night (February 11), where he and his fans congregated in a pink-hued outdoor cabana at the Sony/BMG post-Grammy party at the Beverly Hills Hotel.

The most enthusiastic buzz occurred when Mayer excitedly greeted girlfriend Jessica Simpson, now a brunette, with a bear hug and lip lock, as daddy Joe and sister Ashlee watched. But the excited buzz wasn’t over the liplock. It was over Daddy Joe’s ability to not interfere, the way he did when Jess and Nick were together.

Last night (February 13, 2007) Jessica Simpson surprised fans at a local bar when she and her beau, John Mayer, showed up for a little pre-Valentine’s Day drink and sat in a corner booth.

Both music stars graciously posed with several fans and caused quite a stir among locals.
